Jane's Sourdough Starter

 

 

Provenance: Origin unknown. Traveled Oregon Trail 1840's, California 1900's, Sonoma, CA today. Kept active for the most recent 53 years by Joanne T. who once a week fed it equal amounts of evaporated milk and warm water, mixed together with white all purpose flour.

Care & Feeding: Store 12-14 ozs starter in a 24+ oz. jar. To feed discard all but 8 ounces. To this add 1/2 Cup of warm water to your starter and stir. Add 1 cup all purpose flour and stir. You seek a thickened mixture but one slightly difficult to stir. If it is too dry, add a tiny bit of warm water; too sloppy, add a little flour. If you are baking in the next day or so, leave it out and feed it daily; otherwise cover and refrigerate after feeding up to 30-40 days. To restore after refrigeration: stir the darker alcohol on top into the remaining mixture then proceed from the top.
